The beef served at ASADO comes from the premium restaurant selection of BELLINI CARNI (LA MARBLET), sourced from the following breeds. At the time of your selection, 30-day dry-aged beef from one of the following varieties is available: HEBE – German heifer aged between 18 and 30 months from selected farms, offering a strong and deep flavor, bright red color, and fine marbling. FREYA – Female cattle from four main breeds: Danish Red (the only native breed), Holstein, Friesian, and Jersey. Raised outdoors or semi-outdoors and certified as “Danish Beef” – meat with a bright red color and good marbling. DEDALUS – Male calves raised primarily outdoors, with finishing during the final months based on a sugar beet diet. The young age and genetics of these animals guarantee noble meat with excellent flavor and valuable nutritional qualities, featuring a bright red color and lighter, delicate marbling. DIVINA – Italian cows from selected farms in the Po Valley, mainly of the Friesian breed. Traditionally raised for milk production but also highly valued for their meat, these animals reach a maturity that provides rich marbling and exceptional juiciness, with deep, balanced, and highly enjoyable flavors.
